🫐 Weetabix Blueberry Overnight Cheesecake
🧾 Ingredients (1 serving)
Base
- 2 biscuits (Weetabix or similar wheat biscuits)
- ¼–⅓ cup milk (any milk)
Cheesecake layer
- ¾ cup Greek yogurt (plain or vanilla)
- 2 tablespoons cream cheese (softened)
- 1–2 tablespoons honey or sweetener
- ½ teaspoon vanilla extract
Blueberry topping
- ½–1 cup blueberries (fresh or frozen)
- 1 teaspoon honey (optional)
- ½ teaspoon lemon juice
🥣 Instructions
1. Make the base
- Place Weetabix in a bowl or jar
- Pour milk over it
- Mash and press down to form a firm base layer
2. Prepare cheesecake layer
- Mix Greek yogurt, cream cheese, honey, and vanilla
- Stir until smooth and creamy
3. Make blueberry topping
- Heat blueberries with honey and lemon juice for 3–5 minutes until slightly thick
(or use fresh blueberries without cooking)
- Let cool
4. Assemble
- Spread cheesecake layer over the base
- Add blueberry topping on top
5. Chill overnight
- Cover and refrigerate for at least 4–6 hours (overnight best)
🍽️ Serve
- Eat cold straight from the fridge
- Optional: add crushed nuts or granola on top
